I love these vegan, gluten free fritters they are so yummy! I use flaxseed and chickpea flour with a little water as binders instead of eggs which works exceptionally well and adds even more health benefits to these delicious broccoli fritters.
As I don’t like to fry my food I use a little oil, fry them on one side, turn them over and then cover the pan to cook slowly.
An easy way to make your own chickpea flour as it can be hard to buy in supermarkets. Simply process dried chickpeas in your blender on high, then strain through a fine mesh strainer.
Ingredients
· 1 large head of Broccoli (about 3 cups)
· 2/3 cup Chickpea Flour
· 2 tablespoons of Flaxseed Meal
· 1 Onion chopped
· 2 cloves Garlic chopped
· ½ teaspoon Ground Cumin
· Pinch of Cayenne Pepper
· Salt to taste (optional)
· 2 Tablespoons of Olive oil or Coconut Oil for frying
Directions
1. Steam the broccoli for a few minutes until fork-tender. Mash up broccoli with fork.
2. In a large bowl, combine the broccoli pieces with all the other ingredients and mix well until the mixture feels like it will hold together.
3. Mix well and squeeze together like you are forming a dough.
4. Heat oil on medium in a large frying pan.
5. Form into patties using tablespoon scoops of the mixture, place fritters in the frying pan.
6. Reduce heat to low and cook fritters on each side for about 4 minutes until golden brown.
7. These are lightly fried and not deep fried. Cover the pan after turned over, to make sure the fritters are well cooked in the middle.
8. Drain on a paper towel-lined plate. Serve hot!
Delicious served with either mint yogurt or guacamole or homemade tomato sauce and with a crisp fresh green garden salad.
I make so many that I freeze them in single serve sizes, so I can quickly microwave them for 2 minutes, add my homemade tomato sauce and green salad and I have a delicious healthy, hearty, meal in minutes!
