Potatoes turn to sugar in the body thus putting on weight, but Sweet Potatoes known as "Kumara" in New Zealand, does not.
Thus the reason for eliminating potatoes from your diet and replacing them with Kumara!!
I love Kumara Mash served with my Lentil & Vegetables Curry plus a variety of other dishes where I would normally serve Mashed Potatoes.
· 600g orange kumara (sweet potatoes), peeled and cut into even-sized pieces
· 1 Tablespoon of butter or for vegans use NUTELEX (vegan butter)
· 1 Teaspoon of salt to boiling water
· 1 Teaspoon of crushed garlic
· Salt & Pepper to taste
1. Cook kumara in pot of salted boiling water until soft, about 15 to 18 minutes until tender.
2. Drain the water off.
3. Add to the pot add butter/Nutelex, crushed garlic and salt & pepper.
4. Mash then use whisk until smooth.
