This is so delicious it has become a family favourite, serve with salad or with salad and steak...yum either way! Leftovers taste delicious also!
1 cup Macaroni pasta
500g Zucchini grated
250g Haloumi cheese, grated coarsely
1/3cup Parmesan cheese, finely grated
1 cup Colby, cheese grated
1 cup Milk
1 heaped tablespoon Flour
1 tablespoon of butter
1 teaspoon of crushed garlic
2 pinches of Cayenne Pepper
½ teaspoon salt
Bunch of fresh parsley or herb of your choice
Salt & Pepper to taste
PREPARE
1. Preheat oven to 180C or 160C fan forced.
2. Cook macaroni pasta in boiling salted hot water for 10 minutes, drain with a little olive oil and set aside.
3. Make cheese sauce: melt butter in a saucepan with ½ teaspoon of salt and cayenne pepper. Once melted remove from heat and add flour and stir quickly to smooth paste. Add milk and Colby cheese. Stir over heat until cheese is melted. Set aside.
4. In a large bowl add and mix together zucchini, garlic, parmesan, half the haloumi, parsley, macaroni and cheese sauce. Mix well.
5. Large baking dish rub with olive oil and pour in the in the mixture.
6. Top with remaining grated haloumi and salt and pepper.
7. Bake for 45 minutes.
8. Serve in slices with green salad.
