DAY 21: IT IS MUSHROOM & LENTIL PIE FOR DINNER TONIGHT! YAY!

The countdown is on, not long to go now until my 30 days are up!

Tonight I making one of my favourite dishes a Mushroom and Lentil Pie. It is very tasty and I think even non-vegans would love it too!!-:) You might like to give it a try - you may be surprised how good it really is.

Here is my recipe...you can make it as little individual pies or one big family pie.

Mushroom & Lentil Pie

Ingredients

  • 2 sheets ready-made frozen puff pastry

  • 1 x 400g can lentils, drained and rinsed

  • 4 tablespoons olive oil

  • 1 medium onion, roughly diced

  • 2 tablespoons finely diced garlic

  • 1 tablespoon roughly chopped fresh sage leaves

  • 1/2 cup red wine

  • 5 cups portabella mushrooms, roughly diced

  • 1 teaspoon fresh thyme or dried thyme, finely chopped

  • 4 baby carrots, roughly diced

  • 2 cups vegetable stock

  • 2 teaspoons cornflour & water

  • Sesame seeds

Method

  • Remove puff pastry from freezer to thaw

  • Preheat fan oven to 200 degrees.

  • Add 1 tablespoon of olive oil to frying pan, then saute onions, cook for 2 minutes then add garlic and sage leaves cook for a further minute. Increase heat to high then add red wine, allow wine to reduce to almost no liquid.

  • Add remaining olive oil then add mushrooms, thyme and cook for a further 5-10 minutes. Add carrots and stock, reduce heat to a medium simmer and allow mixture to cook for 30 minutes, stirring occasionally.

  • Mix the corn flour together with a few tablespoons of water until there are no lumps of flour. Add this to the mixture together with the lentils. Stir well and season with salt and pepper.

  • Individual pies: Divide mixture between 1-cup capacity ovenproof ramekins. Cut out a circle of pastry for each ramekin ensuring that the circle is slightly larger than the rim of your ramekin. Carefully place the pastry on top of the ramekin to create a lid, pinch the edges with your fingers and sprinkle with sesame seeds.

  • Family Pie: Place pastry over pie dish, pour in the mixture. then add the other pastry on top and pinch around sides with your fingers and top with sesame seeds

  • Place ramekins in oven and bake for around 20 – 25 minutes.

5am: Chocolate Meal Replacement

7am: Aqua Jogging - 20 laps

8.30am: Ab exercises for 30 minutes

9am: 2 protein balls with cup of herbal tea

10am: FIZZ drink for extra energy

12noon: Vanilla Meal Replacement with a scoop of greens

4pm: 2 protein balls with cup of herbal tea

6pm: Dinner; Broccoli with roast pumpkin and kumara
